Victus Restaurants' Kitchen Head, Mariusz, reveals a typical day in the Victus Kitchen. As Head of the Victus Restaurants in Harrogate kitchen, Mariusz, 21, who moved to England 10 years ago with his family, is in the ideal position to let you inside the heart of their kitchen.

As the Kitchen Manager, I have a lot of pride in the food we create here at Victus.

By using our local butcher, greengrocers and dairy farm every day, we are inspired by their produce. This inspiration has created our delicious menu including tasty Burgers, Chilli con Carne, crisp fresh salads and sandwiches, packed full of a variety of fillings.

I start my day preparing all our breakfast items. The ovens get warmed up ready to cook the pastries. The best part is when the bacon starts to cook and fills the kitchen with mouth watering smells. The porridge pot gets underway and the American pancakes are lovingly made to offer a great fluffy stack, ready for adding toppings.

Throughout the morning we prepare all the ingredients to take us through the day. We start cooking our soup and bake the bread rolls to go with it.

All the beef burgers, meatballs and chilli con carne and all our sandwich fillings are prepared each day.

After having sacks of potatoes delivered, the guys get peeling and chopping, ready for the first stage of our thrice cooked chips. This method gives the chips a great texture, light but crispy.

It's all full speed during the afternoon, where I then take my position on the food pass, calling out the orders and directing the kitchen.

We all work with high energy and enthusiasm and the love of tasty food that we want to share with the customers.
